Since 話す means "to speak," your way of doing that would be your way of speaking or your speaking style. This includes your tone of voice, speed, and even how you use gestures when talking. It's more about the whole way you communicate, not just the wording or how you phrase things.
This word uses kun'yomi readings for both kanji. You learned the はな reading with 話す, and the かた reading for 方 is the one you learned with other "how-to" words like 使い方 and 読み方.
