This jukugo word uses on'yomi readings. The そう reading for 草 may be new for you, so here's a mnemonic:
A herbivorous animal has a pure soul (そう). It doesn't need to eat other animals to survive, right? Hence its pure, guilt-free, herbivorous soul. Whenever you think of herbivores, think of their beautiful souls.
