You know that 狩り is hunting already. This is the same thing (hunting). Difference is this one is attached to other words to specify what kind of hunting you're doing.
The reading is the same as 狩り, but since it follows another word, it gets rendaku-ed. Here is a mnemonic to help with remembering the rendaku.
Hunting can be girly (がり), if you dress up like a girly hunter.
鹿狩り用の見張り台は、今は大きなブルーシートで覆われています。
